At Soléa and Mistral, the menu is guided by the rhythm of the seasons and the abundance of Bali’s land and sea, interpreted through the sunlit flavours of the Mediterranean. We draw inspiration from eighteen countries, weaving their influences into dishes that honour freshness, vibrancy, and imagination. At Soléa Rooftop Restaurant, this philosophy unfolds in an elegant, unhurried dining experience... There’s also a curated tasting menu best enjoyed with carefully selected wine or non-alcoholic pairings. Mistral Rooftop Dining Bar carries the same soul, but with a brighter, more easy-going pulse, featuring shareable bites and wholesome meals paired with inventive cocktails. Two distinct moods, one shared ethos: Mediterranean cooking that celebrates honest flavours, seasonal ingredients, and the joy of gathering at the table.
FOUNDERS
EELKE PLASMEIJER & RAY ADRIANSYAH
Chefs & Co-Founders, Locavore Group
Eelke Plasmeijer began his culinary journey at just 14, in the small Dutch village where he grew up. His path took him through hospitality school and the kitchens of several Michelin-starred restaurants before a move to Jakarta, where he became Head Chef at a leading restaurant. It was there he met Ray Adriansyah, a talented Sous Chef raised in Indonesia by Sumatran parents. The two discovered a shared vision for food rooted in creativity, locality, and respect for ingredients. United by this dream, they relocated to Ubud, Bali, to oversee the kitchens of a boutique hotel and nurture a vision of a restaurant committed exclusively to Indonesian produce. Eleven years ago, they co-founded Locavore, which has since become the flagship of the Locavore Group, a collection of acclaimed restaurants and bars that celebrate Indonesia’s rich biodiversity through curated ‘local ingredients only’ menus. In late 2023, Locavore evolved into Locavore NXT, a pioneering concept that transcends the traditional dining experience, further advancing their philosophy of locality and innovation.

RAFAEL MARTINEZ MILLAN
Executive Chef, Soléa
Hailing from the coastal city of Valencia, renowned as Spain’s rice capital, Chef Rafael’s culinary journey has been shaped by the Mediterranean spirit of his homeland. He has had the privilege of working alongside some of the most esteemed chefs in the Michelin world, including Ángel León, holder of four Michelin stars, Carme Ruscalleda, with an extraordinary seven stars, and the renowned Peruvian Nikkei chef Gastón Acurio, recipient of the Diners Club Lifetime Achievement Award 2018.
His experiences accompanying his mentors at prestigious shows and exhibitions have reinforced his belief that true excellence in the kitchen arises from unwavering trust and teamwork, a philosophy he carries forward in his own culinary pursuits.
Specialising in both the classic traditions and contemporary expressions of Spanish cuisine, he weaves in delicate French and Italian influences, creating dishes that are as rooted in heritage as they are alive with modern imagination.

RAKA AMBARAWAN
Head of Beverages, The Locavore Group
For over a decade, Raka has been the quiet force behind some of Locavore’s most memorable pours. A self-taught mixologist with an instinct for the unexpected, he honed his craft through fearless experimentation, developing cocktails that push boundaries while remaining balanced and approachable. At Mistral, he draws inspiration from the produce and spices of Mediterranean countries, creating drinks that are fresh, distinctive, and memorable.

Marine Lorain
General manager
Marine Lorain grew up in Burgundy, surrounded by the hum of guests at La Côte Saint Jacques, her father Jean-Michel Lorain’s Michelin-starred restaurant.
Her journey has taken her through some of the world’s most celebrated kitchens, from the three Michelin-star Waterside Inn in England with Michel and Alain Roux, to The Inn at Little Washington in the USA with Chef Patrick O’Connell.
Marine also managed her father’s Bangkok restaurant, J’AIME by Jean-Michel Lorain, for eight successful years. Before joining Soléa, she served as General Manager of Mozaic Restaurant in Ubud, Bali.
Now at Soléa and Mistral, Marine brings the same balance, a respect for craft, a warm disposition, and a love for creating moments guests remember long after they leave.

THE LOCAVORE GROUP
It’s been 11 years since Chefs Eelke and Ray moved to Bali to open Locavore. Ever since, they’ve created several award-winning restaurants and bar concepts under the Locavore Group. Now, they lend their expertise to the menu at Soléa Rooftop Bar & Restaurant in Sanur.
After winning consistent acclaim for over a decade, in 2023, Locavore also grew into Locavore NXT – a passion project for the two chefs to continue celebrating local ingredients and sustainability.
