At the heart of our menu is fresh Mediterranean produce, with a special focus on seasonal vegetables. Think sun-ripe tomatoes, smoky eggplant, tender zucchini, aromatic chilli... Simple ingredients, yes, but when treated right, can truly surprise the palate. Our approach leans into what’s honest, essential. Fresh fish of the day and other treasures from the ocean are prepared with care to let their natural character shine. Classics like bouillabaisse, gazpacho, and stuffed zucchini flower, are reimagined with both precision and creativity. Meat courses also have their place on the menu, woven in with care, rounding out the experience. Some ingredients are imported to preserve the soul of the Mediterranean, but we also stay grounded in what grows nearby, aligning with the Locavore philosophy: cook from the closest surroundings, as long as it doesn't compromise the integrity of the dish.

TASTING MENU

Soléa Rooftop Restaurant’s curated set menu is offered in 5 or 7 courses, bookended by two savoury snacks to begin and two sweet finishes to end. Rooted in a modern Mediterranean approach, each dish is guided by seasonality, simplicity, and respect for the ingredient. Guests can also choose from a selection of add-ons to extend their menu for a fuller experience. To complement the journey, we offer expertly curated wine pairings, as well as non-alcoholic pairings for those who prefer an alcohol-free option. Whether you opt for a shorter course or choose to linger through all seven, the meal is designed to pique every sense.
